High-Protein Chocolate/Matcha Dorayaki

🥞 Dorayaki Skin Ingredients (Makes 12 pieces / 6 servings):
- 2 eggs
- 30g unflavored egg white protein powder
- 10g soy pulp powder
- 30g coconut flour
- 50g low-gluten flour
- 100g erythritol
- 1/2 tsp baking powder
- 100g frozen almond milk
Instructions:
1️⃣ Mix the eggs and sugar together with a manual whisk, then add the remaining ingredients and stir continuously until smooth with no lumps.
2️⃣ Heat a frying pan over medium-low heat and add a little oil. Use a spoon to pour the mixture onto the pan. Cook for about one minute, then flip to cook the other side for another 30-40 seconds. Let cool and set aside.
3️⃣ Place the custard in a piping bag and pipe an appropriate amount of custard onto the surface of one pancake, then cover it with another pancake.
